Microgreens: The Colourful Superfood

Microgreens are tiny, edible plants harvested in the early stages of growth, just after the first true leaves have developed. They are between sprouts and baby greens in size and are a popular garnish for their vibrant colours and unique flavours. Due to their vibrant hues, microgreens are often referred to as "vegetable confetti" and are perfect for adding texture and a punch of flavour to salads, sandwiches, or even soups.

Popular Microgreens

  • Amaranth: Known for its deep red leaves and mild flavour.
  • Basil: A fragrant herb that’s perfect for Italian dishes.
  • Chervil: A delicate, anise-flavoured green.
  • Coriander: Adds a fresh, citrusy flavour to any dish.
  • Garland Chrysanthemum: A slightly bitter microgreen that pairs well with stir-fries.
  • Rocket (Arugula): Peppery and great for salads.

How to Grow Microgreens

Growing Medium

  • Use a seedling or hydroponic tray filled with a thin layer of potting mix.
  • Alternatively, you can grow them hydroponically, using a specially designed microgreen tray for water-based growth.

Sowing

  • Scatter the seeds evenly over the growing medium's surface, then lightly cover with a fine layer of soil or press them down lightly into the mix.

Watering

  • Keep the seeds moist but not soaked. To avoid overwatering, spray the seeds with a fine mist of water. Once the seeds start germinating, continue to spray them lightly.
  • Cover the tray between waterings to reduce evaporation.

Feeding

  • After the first few days, feed your microgreens with half-strength liquid fertiliser to encourage rapid growth.

Harvesting

  • Microgreens are ready to harvest within 7-14 days or once the first true leaves appear.
  • Use scissors to snip the greens just above the soil line for the freshest taste and maximum nutrition.

Top Tips for Growing Microgreens

  • Ensure the growing environment is well-lit, as microgreens need plenty of light to develop vibrant colours and flavours.
  • Harvest just before serving to maintain freshness and flavour.
